Ingredients for Kabiraji Fish Curry
Fish fillet -4 pieces
Onion -1 small, paste
Ginger paste-1 teaspoon
Tomato puree 1/2 cup or 1 medium tomato paste
Turmeric -1 teaspoon
Cumin powder -1/2 teaspoon/ Cumin paste
Red chili powder -1/2 teaspoon
Green chilies - 4 to garnish
Panch foron - 1 teaspoon
Salt to taste
Mastered oil or Any cooking oil - 4 tablespoons
Water -1, 1/2 cup
Coriander leaves to garnish.
Fish Cooking Method
Heat the frying pan add enough mustard oil/any cooking for shallow frying the fish.
Heat till the oil is smoking hot. Add the fish pieces one by one on high heat. Be careful as the oil will splutter.
Cook till one side is done and browned. Turn the pieces over and brown the other side too. Remove from oil, drain and keep aside.
Curry / Sauce Cooking method
Heat 1 tablespoon of mustard oil/any cooking oil and add the paanch phoron.
After it turns brown, add the chilies and the sliced onions. Fry till the onions turn soft and golden brown.
Mix the ginger paste , Cumin paste or Cumin powder and tomato puree, with a quarter cup of water and add this too the pot.
Fry for a while and then add the turmeric powder & Red chili powder. Stir well for a while and then add water and then some salt.
Finally, add the fried fish pieces.
Cover and simmer for 12 minutes or until the fish is fully cooked.
Optionally, garnish with chopped, fresh coriander leaves just before serving hot with plain steamed rice.
